Unlike my mother who always buy extras, the selfish part of me only buy one – especially something that is new. One early morning, I bought the usual pan de sal for me and John for the weekend and this ginormous ensaymada.
I have had many different ensaymada from my parents’ discoveries, relatives from different provinces and even in posh bakeshops. I have had ensaymada with cheddar, salted egg, a dollop of whipped butter (this was yummy), quezo de bola, macapuno, ube halaya, soft like buttah, eggy like brioche and cake-y.
Pan de Manila’s Ensaymada Espesyal was doughy laden with butter. There’s a slight resistance when I bite into it with hints of margarine, a little sugar and the Quezo de Bola. A nice afternoon snack. If only I had some old fashion hot chocolate to go with it.
Have you tried Pan de Manila’s Ensaymada Espesyal?
Any suggestions where to buy good ensaymada?

I havent tried this but they say the ensaymada sold in Rockwell (this cafe of Diamond Hotel I think) sells really good ensaymada. It’s the store near Hobbes & Landes. π

you need: Rolling pin, cooking brush
ingredients
One whole butter
small can of condensed milk
1/4 cup of instant dry yeast dissolve in one cup of water
1/4 cup of white sugar
eight egg yolks
800 grams of all purpose flour
keso de bola if not you use ordinary cheese for topping
procedure:
in electric mixer creme the butter and sugar until fluffy or about 8 minutes in medium speed. add egg yolks, condensed milk, all purposed flour and yeast dissolved in 1 cup of water. This is the little hardest part, the texture of dough of ensaymada espesyal is soft (malambot ang pagkamasa not napakalambot or sobrang lambot) when the dough is ok make a ball dough, anyway in 800 grams of flour makes 12 ensaymada espesyal (kya para di kayo mahirapan e divide nyo sa 12 pieces and dough) when you dived rolling pin it vertically and brush it with little butter and slide it from the top or magiging pahaba na sya and twisted it and let it rest for about 15 to 20 minutes or until the dough turn in double in bulk. bake at 350 degrees Celsius or until golden brown. cool completely. brush it and top with cheese and little white sugar or confectioner sugar. enjoy.
this is not a fake. it truly indeed. I make this it because i want somebody do this at home. I want somebody learn about baking.

para di po kayo mahirapan pwede nyo na po pagsabay sabayin lahat ng ingredients,,pag gumagawa kasi ako nyan sabay sabay na po para mabilis ako matapos sa trabaho ko,,ang pag crecreme po kasi eh matagal,,at para di kayo mahirapan pag na divide nyo na po sya sa 12 pieces just roll it o pahabain nyo nalang sya parang cheese stick ng pan de manila then twisted it paikutin nyo po ng pabilog gaya ng nakikita nyo sa finish product. then rest,,mabilis lang po paalsahin nyan,,
