I love pesto. I love it on everything — pasta, bread, chicken, fish and even in meat. I want to make it at home but I lack 2 important ingredients in a good pesto – mortar and pestle/food processor and pine nuts (House of Nuts are always running out of them). So my next way to get to my pesto fix is the bottled pesto. I have tried alot of bottled pesto but Claude 9’s organic pesto is on top of my list. Claude 9 is a product of culinary visionary Claude Tayag. The bottled pesto is made from organic basil (probably from Mr. Tayag’s garden), garlic and olive oil. I expected a heavy basil flavor instead there is a subtle sweetness to them and a big punch of flavor from the garlic. It was the first thing I saw upon entering the grocery and first item in my cart. Right then and there I knew I have found my pesto heaven.
I first tried the pesto with some penne pasta. Well, unfortunately it didn’t turned out that so good. Maybe because it lacked the creaminess that the pine nuts would give in a pesto. But I have discovered that its great with pan de sal. The sweetness of the pan de sal compliments the flavor of the pesto. I toast the pan de sal smothered with pesto and makes our house smells like morning — freshly cut grass plus garlic rice. Super Yum!
